Title: Controlling an Induction Cooktop

I followed I believe it was Iratherfly's build of a PID controlled turkey roaster for heating milk. I also followed the threads(possibly by Sailor) on using induction cooktops for the same purpose. I noted that all the induction cooktops I have seen have a low setting that is too high for a lot of our purposes(around 140F). So I was wondering if anyone has tried to use this same kind of controller on this type of cooktop or if it is at all possible to do so. Any Ideas?

I have been toying with the idea of using one of these gadgets for a while and had a couple of questions for the membership. First, is anyone using a temperature control unit with their cooktop? I was thinking of rigging one through either a PID controller or perhaps a Ranco controller to control the set points. Second I was wondering if anyone has had any issues with hotspots and possible scorching in the center of the pots you are using. When researching the cooktops I have seen this mentioned a couple of times. It seems to me that if you brought the temperature up slowly enough it would not be an issue for this type of use. Also wondering what you thought might be the practical size limitations in gallons and pot width. I know some of the members have mentioned 1800w units. Most of the induction units I have seen have a element diameter that is around 7-8 inches.
