Title: Tilsit - damaged rind, exposed core

Hi folks,
I have a little problem with my tilsit which I made on 15.8.2021. First I had a little struggle with B.linens growth, but after adjusting the washing method I have a nice smear going on. What troubles me are 5 white dents, where I probably damaged the rind during washing/brushing on where the mould had eaten the rind so the core of the cheese is exposed. It doesn't smell off and the dent is the same texture as the rind, it's not softer at all. I'm not able to "create" a new rind in these spots, as it always washes away even with the slightest washing.

Is it something I should worry about and crack the cheese open now, or is it ok and I can keep aging it for another month or so?

You have nothing to worry about. Of course you can age it for another month or longer. At that age I think it no longer needs any washing. Maybe spot clean the molds if they do appear.
