Title: what can I substitute for C20G chevre culture?

I am try to make belper knolle and I only have mesophilic and thermophilic culture. I am wondering if i can substitute either one for C20G chevre culture. Thank You.

Flora Danica would be excellent (hi Ann!), but if you don't have that, use the mesophilic. (Flora Danica and chevre culture are both meso blends.)

I use Flora Danica (or Aroma B---like it better) when I don't have the C20G
BUT, you'll have to add a tiny bit of rennet--depends on the quanitity of milk of course--but I'm talking a drop or two or three....
C20G is a blend that includes dry rennet.
