Title: Storing Blue that has rind
Post by: Dorchestercheese on December 08, 2017, 01:59:23 PM
So I'm getting ready to move some Shropshire blue into my blue cheese cave.  I currently have a few other blues with natural rind in there...
Problem is i've found a few mites in the older blue...just on the outside ..but I want to clear and wash the cave before introducing the new cheese.
They are two pound blocks the cheese...can I vacuum pack them? or move them to a colder fridge and wrap them in cheese paper?
