My first attempt at Camembert. Following a recipe from http://www.sfmilkmaid.com/book/ (http://www.sfmilkmaid.com/book/)
Cheese has been in the dorm size refrigerator at 45 F for 25 days. I have flipped them daily but lately fridge and the storage bin have developed stinky odor.
Going to let continue to age but wanted to ask the experts: Is this something to be concern about? Is this cheese still eatable?
See photos for visual.

It is likely ammonia. Looks like they are about ripe for eating. Air them out for an hour and any ammonia smell will dissipate. If it is not ammonia then the smell should persist but your cams look pretty good to me.
Agree with Kern. Also, Camembert can get pretty stinky, especially when getting ready to eat :). They look beautiful ^-^.
